Seafood Chowder

1 lb mixed seafood (shrimp, scallops, and fish)
4 cups fish stock
1 cup heavy cream
1 medium onion, diced
2 stalks celery, diced
2 medium potatoes, peeled and diced
2 cloves garlic, minced
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
2 tbsp butter
1/4 cup fresh parsley, chopped

In a large pot, melt the butter over medium heat.

Add the diced onion, celery, and garlic. Sauté until the vegetables are soft, about 5 minutes.

Stir in the diced potatoes, thyme, salt, and pepper. Cook for another 2 minutes.

Pour in the fish stock and bring to a boil. Reduce heat and let simmer until the potatoes are tender, about 15 minutes.

Add the mixed seafood to the pot and cook for an additional 5-7 minutes until the seafood is cooked through.

Stir in the heavy cream and heat through, but do not boil.

Taste and adjust seasoning if necessary.

Remove from heat and stir in the fresh parsley before serving.
