Set your Instant Pot to sauté mode and add the oil of your choice.

Add onions and cook until translucent.

Add pork, salt, and pepper. Note that the cook time will depend on the cut of pork; smaller pieces will take less time.

Add garlic and cook the pork until browned on all sides.

Add chicken broth, tomato paste, fish sauce, and soy sauce. Mix until well combined.

Toss in bay leaves and close the lid, setting the sealing valve.

Cook on manual high pressure for 10 to 15 minutes.

Allow natural pressure release for 10 minutes, then manually release the rest of the pressure.

Open the lid and add frozen peas and pimentos. Stir to heat through.
