300 grams beef
1 tablespoon light soy sauce
1/2 teaspoon sugar powder
1 1/2 tablespoons cornstarch
1/2 thumb-sized ginger
2 cloves garlic
1 cup water
1 tablespoon oyster sauce
1 tablespoon duck sauce
1/2 tablespoon sugar
1 tablespoon chili powder
1/2 tablespoon sesame seed oil
1 tablespoon Shaoxing wine
5 stalks spring onions

Slice 300 grams of beef very thinly against the grain.

Use the back of a cleaver to chop the beef into smaller pieces.

In a bowl, combine the beef with 1 tablespoon of light soy sauce, 1/2 teaspoon of sugar powder, 1 1/2 tablespoons of cornstarch, and the juice from 1/2 thumb-sized ginger.

Mix well and marinate for 10 to 15 minutes.

Heat oil for deep frying until hot.

Carefully add the marinated beef to the hot oil and deep fry for 10 to 15 seconds until sealed and tender.

Remove the beef and drain excess oil, leaving about 1 tablespoon in the pan.

Add 1 shredded thumb-sized ginger and 2 cloves of minced garlic to the oil.

Add 1 cup of water, 1 tablespoon of oyster sauce, 1 tablespoon of duck sauce, and 1/2 tablespoon of sugar to the pan.

Mix well and add optional 1 tablespoon of chili powder for spice.

Add the fried beef back into the sauce and coat well with the sauce.

Finish with 1/2 tablespoon of sesame seed oil and 1 tablespoon of Shaoxing wine.
