Apple Strudel Puff Pastry Braid

Cultural Context

Apple strudel has its roots in the Austro-Hungarian Empire, where it became a beloved dessert symbolizing comfort and home. Traditionally made with thin layers of dough filled with spiced apples, it has evolved into many variations, including this puff pastry braid. Today, it is enjoyed worldwide, often served warm with a dusting of powdered sugar or a scoop of vanilla ice cream, celebrating the delightful combination of flaky pastry and sweet, tart apples.

1

Preheat the oven to 400°F (200°C).

2

Peel, core, and slice the apples into 1/8 to 1/4 inch thick pieces using a knife.

3

Melt unsalted butter over medium heat in a pan.

4

In a bowl, combine granulated sugar, light brown sugar, ground cinnamon, and 3 heaping teaspoons of cornstarch.

5

Once the butter is melted, add the sliced apples and the sugar mixture with a little bit of salt to the pan.

6

Cook the apple mixture until the apples release their juices and the juices begin to thicken.

7

Remove the pan from heat and stir in the raisins. Allow the filling to cool completely.

8

Roll out two sheets of puff pastry to 12 by 15 inches, using a cutting board as a guide.

9

Cut two slits on the top and bottom of the pastry to hold the filling in place, then cut long slits on both sides for braiding.

10

Place half of the apple filling down the center of the pastry.

11

Overlap the strips of puff pastry to create a braid pattern, tucking the ends in to secure the filling.

12

Transfer the braided pastry to a baking tray lined with parchment paper.

13

Brush the top with egg wash and sprinkle with granulated sugar.

14

Bake in the preheated oven for 20-25 minutes until golden brown.

15

Let the strudel cool slightly before slicing and serving.
