1

Preheat the oven to 180°C (350°F).

2

Take the ends off the red onions, cut them in half, then into quarters, and break them into petals.

3

Place the onions in a dry ovenproof dish over medium-high heat and let them cook until they caramelize and become sticky.

4

Quarter the eating apples, remove the core, and add them to the pan with the onions.

5

Add a little olive oil, salt, and pepper to the pan and lightly brown the mixture.

6

Prepare the parsnips by removing the core and using a peeler to create strips, then add them to the pan with the apples and onions.

7

Add a tablespoon or two of vinegar to the pan to deglaze and enhance the flavor.

8

Add the free-range chipolatas to the dish, snuggling them among the caramelized fruit and vegetables.

9

Drizzle a little olive oil over the dish and season lightly before placing it in the oven.

10

Bake in the oven for 30 minutes.

11

After 30 minutes, drizzle a tablespoon of honey over the dish and return it to the oven for an additional 5 minutes until golden and delicious.
