Clean and cut the fresh mackerel in half.

Season the mackerel with salt and black pepper.

Slice 1 onion into half-moons, not too finely or too large.

Cut 1 large potato into slices to serve as a base in the baking dish.

Slice 2 bell peppers into rings.

Chop 2 canned tomatoes into pieces.

Add some tomato paste for sauce, but keep some tomato pieces whole.

Chop fresh celery not too finely.

Drizzle 2-3 tablespoons of oil and sprinkle some salt in the baking dish.

Layer the sliced potatoes at the bottom of the dish.

Add the sliced onion on top of the potatoes.

Add the chopped garlic pieces.

Layer the bell pepper rings next.

Place the chopped tomatoes on top of the peppers, ensuring they are under the fish later.

Sprinkle with chopped celery.

Season the vegetables with a little more black pepper and salt.

Pour 250 ml of tomato juice over the vegetables.

Cover the dish with foil and bake in the oven for about 25 minutes until the vegetables soften.

After 20-30 minutes, place the mackerel on top of the vegetables and bake for another 20 minutes until fully cooked.
