Herb Crusted Tri Tip Roast Beef

Preheat the oven to 350°F (175°C).
Peel and crush 3 cloves of garlic.
In a mixing bowl, combine crushed garlic, 1 tablespoon of salt, 1 tablespoon of pepper, and 3 tablespoons of avocado oil (or olive oil).
Add 2 tablespoons of chopped fresh rosemary and 2 tablespoons of fresh thyme to the mixture and crush it into a paste.
Rub the herb paste all over the tri tip roast, ensuring to keep most of it on top to maintain flavor during cooking.
Place the seasoned tri tip roast into a roasting pan with a rack to hold it off the bottom.
Pour a couple of cups of homemade broth into the pan, avoiding pouring it directly on the roast to keep the seasoning intact.
Cook the roast uncovered in the oven to achieve a nice crust, aiming for an internal temperature of 145°F (63°C) for medium.
Roast for about 20 minutes per pound, checking the internal temperature after approximately 50 minutes.
Let the roast rest after cooking before slicing.
