1 cup unsweetened dried thin coconut strips
1 cup unsweetened dried large coconut flakes
90g ginger, cut into thin stripes

Cook the glutinous rice with 2 1/2 cups of water and 1 tsp of salt in a rice cooker.

While the rice is cooking, toast the white and black sesame seeds in a pan until fragrant.

In another pan, add 2 tbsp of oil and fry the roasted peanuts until crispy. Set aside.

Discard the oil from the pan and add another 5 tbsp of oil. Fry the ginger until crisp and golden. Set aside.

Next, add another 2 tbsps of oil and fry shredded dry coconut or fresh coconut shavings until crispy and golden. Sieve the oil and set it aside.

Once the rice is cooked, mix and knead it along with half the roasted peanuts, half the fried coconut, and half the fried ginger, the toasted sesame seeds and 2 tbsps of previous fried oil in a bread machine. Knead for 20 minutes until everything is evenly incorporated into a smooth dough paste.
