Chop 12 whole chicken wings and 4 thighs into pieces and place them in a bowl.

Prepare green seasoning by blending allspice berry, scallion, pepper, habanero, onion, and garlic.

Season the chicken with Montreal chicken seasoning, garlic herb seasoning, kicking chicken seasoning, onion powder, curry powder, and the prepared green seasoning. Let it chill for a couple of hours.

Melt 2 tablespoons of butter in a large pot over medium heat.

Add 2 tablespoons of curry powder to the melted butter and stir to burn the curry slightly.

Add the seasoned chicken to the pot and cover it. Cook for 20 minutes on medium heat to allow the chicken to accumulate its juices.

Wash plain store brand rice three times to make it less sticky.

Put the washed rice on the stove, season with chicken bouillon powder, fresh thyme, and butter. Cover and bring to a boil on high heat.

Once boiling, reduce the heat to medium-low and cover, leaving it to cook.

After 20 minutes, check the chicken. Add garlic, scotch bonnet pepper, onion, carrots, and water to the pot. Mix well and cover again, cooking for 25 minutes.

After 15-18 minutes, fluff the rice and check for doneness.

Taste the chicken for seasoning. Add salt, pepper, scotch bonnet hot pepper sauce, and fresh thyme to adjust the flavor.

In the last 5 minutes of cooking, increase the heat to medium-high to reduce the gravy until thickened. Add chopped green onions just before serving.
