Prepare a dry rub by mixing 1/2 cup brown sugar, 2 tablespoons smoked paprika, 1 tablespoon celery salt, 1 tablespoon onion powder, 1 tablespoon ground dried sage, and 1 tablespoon ground hot chili in a bowl.
Rub the spice mixture all over a 1.5 kg piece of beef brisket, ensuring to cover all sides.
Wrap the seasoned brisket in plastic wrap and refrigerate overnight.
Slice one brown onion and place it at the bottom of the slow cooker.
Add the marinated brisket to the slow cooker on top of the onion.
Prepare the braising liquid by mixing one can of Coca-Cola with 300 ml of barbecue sauce, three grated cloves of garlic, a pinch of salt, and ground black pepper in a bowl.
Pour the Coca-Cola mixture over the brisket in the slow cooker.
Cook the brisket on low for about 8 hours.
After 4 hours, rotate the brisket in the slow cooker for even cooking.
Once the brisket is tender after 8 hours, preheat the oven to a high temperature for caramelization.
Reduce the braising liquid in a saucepan until syrupy, then baste it over the brisket.
Optionally, add 1 teaspoon of liquid smoke to the reducing sauce for additional smoky flavor.
Place the brisket in the hot oven for about 20 minutes, basting a couple of times during this period.
Prepare mini bread rolls and fill them with shredded cabbage, carrot, and beetroot.
Slice the brisket and place pieces on the rolls, topping with gourmet mustard.
