1 can (15 oz) canned kidney beans
2 cups water
2 tablespoons vegetable oil
1 medium onion, chopped
1 tablespoon fresh ginger, grated
1 habanero pepper, whole
1 teaspoon seasoning powder
2 cups long-grain rice
1 cup meat broth
1 can (13.5 oz) coconut milk
1 can (15 oz) precooked beans
1 medium red bell pepper, chopped
1 medium green bell pepper, chopped
3 green onions, chopped
2 fried plantains, for garnish

Add washed beans to the pot and add water.

Cook the beans for a few minutes, then pour out the water and add more water to continue cooking until tender.

In a pan, add vegetable oil and onion, then fry for a bit.

Add roughly blended habanero pepper to the pan and stir-fry for a few minutes.

Add seasoning powder of choice to the pan.

Add washed rice (not precooked) to the pan and stir in.

Add more seasoning powder, meat broth, and coconut milk to the rice mixture.

Stir in the precooked beans and mix everything together.

Cook until everything is soft.

Add leftover chicken, red bell pepper, green bell pepper, and string onion to the pot and mix well.
