1 cup buckwheat flour
2 cups milk (or plant-based milk)
2 large eggs
1/4 tsp salt
2 tbsp melted butter (or oil for vegan option)
1 tbsp sugar (optional)

Add 2 cups sparkling water to the bowl.

Whisk together until there are no lumps and the mixture is air-rated.
