Buckwheat Crepes

3/4 teaspoon salt
1 cup buckwheat flour
1 tablespoon melted butter

Blend 1 cup milk, 2 eggs, and 3/4 teaspoon salt in a blender.

Add 1 cup buckwheat flour and 1 tablespoon melted butter to the blender and blend until smooth.

Refrigerate the batter for about 1-2 hours.

After refrigerating, transfer some batter to a bowl and add water to thin it out.

Heat a cast iron skillet and add butter to coat the pan.

Pour the crepe batter into the center of the pan and swirl to spread it out.

Cook until the edges dry up and the bottom is browned, then flip the crepe.

Remove the crepe from the pan and set aside.

In a separate small non-stick pan, add butter and crack an egg to cook sunny side up.

Once the egg is cooked, assemble the crepe with ham, cheese, and the sunny side egg.
