1 tablespoon ginger garlic paste
2 tomatoes or tomato paste
4 large potatoes
1 bell pepper

4-6 eggs
kasuri methi
fresh coriander
fresh mint

Heat 4 tablespoons of cooking oil in a pan.

Add 4 tablespoons of fried onion to the oil.

Stir in 1 tablespoon of ginger garlic paste and sauté.

Add 2 tomatoes or tomato paste and mix well.

Add 4 large potatoes (chopped) and 1 bell pepper (chopped) to the mixture.

Mix the vegetables well.

Add spices: turmeric, dried coriander, cumin, red chili powder, and salt to taste.

Mix everything together and let the potatoes fry until they change color.

Reduce the heat and add 1 cup of water to cook the potatoes.

After 5 minutes, check if the potatoes are cooked and the spices are well combined.

Increase the heat slightly to let the oil rise to the top.

Crack 4 large eggs into the pan, spacing them out evenly.

Cover the pan and cook for about 5 minutes.

Optionally, add kasuri methi for flavor before covering.

After 5 minutes, uncover to check if the eggs are cooked and serve garnished with fresh coriander and mint.
