1 cup chopped potatoes
1 cup chopped tomatoes
1/4 cup chopped red onions
2 tablespoons olive oil or butter
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon turmeric (optional)
2 eggs
chopped green chilies or jalapenos (optional)
chopped cilantro

Heat a skillet and add 2 tablespoons of olive oil or butter.

Add a pinch of cumin seeds.

Add chopped potatoes and sauté for a few minutes until starting to turn golden.

Add chopped tomatoes and onions.

Add 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

(Optional) Add 1/4 teaspoon of turmeric.

Sauté for a few minutes, then cover and cook for 5 minutes on medium to low heat.

Remove the lid and add chopped green chilies or jalapenos (optional).

Carefully break 2 eggs into the skillet one by one.

Cover and cook until the whites are just set, about 2 minutes.

Garnish with chopped green chilies and cilantro and serve immediately.
