1

Weigh out 175 grams of warm water and add 3 grams of instant yeast along with a spoonful of flour.

2

Stir the mixture until dissolved and let it stand for 5 minutes until light foam surfaces and bubbles are visible.

3

In a large bowl, add 250 grams of flour and 5 grams of salt.

4

Once the yeast is proofed, pour the mixture into the flour and mix the dough with your hands until no dry flour remains, about 2-3 minutes.

5

Cover the dough with plastic wrap and let it rest for 15 minutes.

6

After 15 minutes, wet your fingers with water and stretch the dough up one side, folding it over onto itself. Knead the dough in the bowl for about 8 minutes.

7

Test for gluten development by cutting off a piece of dough and stretching it thin. If it tears before becoming slightly translucent, keep kneading for a couple more minutes.

8

Once gluten is developed, cover the bowl and let it rise until doubled in size, about 60 minutes.

9

Divide the risen dough into two roughly 210 gram pieces.

10

Drizzle olive oil into mini sheet pans until the bottom is lightly covered.

11

Turn one ball of dough out into the pan, grease both sides, and flatten it to the edges of the pan, letting it rest for 15-20 minutes.

12

Prepare the beef by seasoning 80/20 ground beef with salt and black pepper, then cook it in a hot cast iron until done, optionally adding a sprinkle of msg.

13

Grate equal parts of low moisture mozzarella and sharp cheddar cheese and toss them together.

14

Make the mac sauce by mixing 40 grams of mayo, 30 grams of ketchup, 15 grams of mustard, 5 grams of worcestershire sauce, 10 grams of white vinegar, garlic powder, smoked paprika, black pepper, and salt to taste. Adjust with sugar if needed.

15

Thinly slice white onions and prepare shredded lettuce and homemade pickles for toppings.

16

After resting, the dough should be extensible. Pull it to the edges of the pan and bunch it up for a thick crust.

17

Brush the outer crust with olive oil and sprinkle sesame seeds on it.

18

Layer the cheese mixture on the dough, followed by the seasoned beef, and add more cheese on top if desired.

19

Bake in a preheated 450°F oven for about 25 minutes until the cheese is bubbly and the crust is golden brown.

20

Remove the pizza from the oven and add fresh toppings: drizzle special sauce over the beef and cheese, then add shredded lettuce, sliced onions, and pickles.

21

Finish with an extra drizzle of sauce over the top.
