Ingredients

  • 2 cups cooked rice
  • 1 lb salmon fillet
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 avocado, sliced
  • 1/2 cucumber, thinly sliced
  • 1/4 cup green onions, chopped
  • 1 tbsp sesame seeds
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. 1Preheat the oven to 400°F (200°C).
  2. 2Place the salmon fillet on a baking sheet lined with parchment paper.
  3. 3Drizzle olive oil, soy sauce, and sesame oil over the salmon. Season with salt and black pepper.
  4. 4Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through and flaky.
  5. 5While the salmon is baking, prepare the rice according to package instructions if not already cooked.
  6. 6Once the salmon is done, remove it from the oven and let it rest for a few minutes.
  7. 7In a bowl, place a serving of cooked rice as the base.
  8. 8Top the rice with the baked salmon, sliced avocado, cucumber, and chopped green onions.
  9. 9Sprinkle sesame seeds on top for garnish.
  10. 10Serve immediately and enjoy your Salmon Rice Bowl.
