Chop one and a little bit extra yellow onion.

Mince six cloves of garlic.

Melt 2 tablespoons of butter and 3 tablespoons of olive oil in a Dutch oven over medium heat.

Add chopped onion and sauté for about 8 minutes until translucent.

Add minced garlic and cook for about 5 minutes, stirring regularly.

Add 2 cans of whole peeled tomatoes and stir in the liquid.

Add 3 cups of vegetable stock, 1 tablespoon of sugar, and a generous pinch of salt and black pepper.

Bring to a boil, then reduce to a simmer for about 30 minutes.

Use an immersion blender to blend the soup until smooth.

Stir in cream and adjust seasoning with salt and pepper to taste.

Ladle into bowls and garnish with torn basil.
