Spoon the tuna salad over each cucumber slice.
Cut slices of manchego cheese about 1/4 inch thick and place them in a serving dish in a single layer.
Cut strawberries in half lengthwise and remove the stems, then place them cut side down over the cheese.
Drizzle with extra virgin olive oil and top with dried rosemary.
Cut 3 medium-sized tomatoes into thin slices, then roughly chop them and add to a bowl.
Grate in 1 clove of garlic, add 2 tablespoons of chopped parsley, 1 teaspoon of sherry vinegar, and 1 tablespoon of extra virgin olive oil.
Season with sea salt and black pepper, then mix and set aside to develop flavors.
Cut a baguette into diagonal slices that are 1 inch thick and place them in a serving dish.
Top each baguette slice with a generous portion of the tomato mixture using a slotted spoon to avoid sogginess.
Add 3/4 cup of cream cheese into a bowl and mix with 1/2 teaspoon dried thyme, 1/2 teaspoon dried oregano, 1/2 teaspoon dried parsley, 1 teaspoon lemon juice, and 1 tablespoon extra virgin olive oil.
Season with sea salt and black pepper, then mix until creamy.
Pat dry 4 jarred roasted red bell peppers and stuff each with the herb cream cheese mixture.
Cut each stuffed pepper in half lengthwise and place over crackers.
