Place 3 liters of water in a medium sized pot.

Add 1 teaspoon of salt to the water.

Cut 10 medium sized white potatoes and 1 small onion into smaller cubes.

Place the potatoes and onion in the boiling water.

Boil the potatoes and onion for approximately 15 minutes.

Check if the potatoes are cooked by placing a knife through them.

Use a hand blender to puree the potatoes and onion in the pot.

Add 1/3 cup of olive oil to the pot.

Add 1 thinly sliced chorizo to the pot.

Add 4 cups of finely chopped collard greens to the pot.

Let the collard greens cook with the chorizo in the pot for approximately 5 to 8 minutes.
