1 liter water
1 tablespoon salt
1 Calabrian sausage (250g)
150g bacon
6 leaves of collard greens
1 medium onion
4 cloves of garlic

Peel and chop the potato.

Add 1 liter of water to a pot and cook the potatoes until soft.

Fry the Calabrian sausage and bacon until golden brown, then remove and discard excess fat.

Chop 1 medium onion and crush 4 cloves of garlic, then sauté for 3 minutes.

Separate the collard greens into two parts, cutting 3 leaves into thick pieces and the other 3 leaves into very thin pieces.

Add the finely chopped collard greens to the sautéed onion and garlic.

Blend the boiled potatoes with the thick pieces of collard greens and the potato cooking water until finely crushed and creamy.

Bring the mixture to a boil, adding 1/2 tablespoon salt, and let it boil for 5 minutes, stirring occasionally.
