Remove the chuck roast from the refrigerator and let it come to room temperature.

Wash the chuck roast and pat it dry with a paper towel.

Rub oil all over the chuck roast, front and back.

Season the roast with all-purpose seasoning, garlic and onion seasoning, and Tony's seasoning, making sure to season both sides and pat it in.

Heat oil and butter in a 12-inch cast iron skillet until melted and hot.

Sear the chuck roast in the skillet for about 5 minutes on each side until nicely browned.

Remove the roast from the skillet and set it aside, allowing the pan drippings to remain.

Add chopped celery, onions, bell peppers, and garlic to the skillet and cook for about 5 minutes, mixing well.

Preheat the crock pot.

Layer some of the cooked vegetables at the bottom of the crock pot.

Place the chuck roast on top of the vegetables in the crock pot.

Add the remaining vegetables, including about 1/2 bag of baby carrots and red potatoes, to the crock pot.

Prepare a slurry by mixing Lipton Onion Soup mix, Worcestershire sauce, dry thyme, garlic and onion seasoning, and cornstarch in a bowl until dissolved.

Pour the slurry over the roast and vegetables in the crock pot, adding a bit more water if needed.

Cover the crock pot and cook on high for about 4 to 6 hours or on low for 7 to 8 hours.

After 3 hours, check and stir the ingredients in the crock pot.

After 6 hours, check the roast for tenderness and adjust seasoning if necessary.
