Black Bean Soup with Chimichurri

The addition of chimichurri, a vibrant herb sauce, elevates the soup with fresh flavors, making it a staple in many households. Today, variations abound, with some incorporating meats or other beans, but the classic version remains a comforting favorite.

Heat a pan and add a glug of olive oil.
Add chopped onion and minced garlic; sauté for about 2 minutes.
Add chopped red peppers and tomatoes along with green seasoning; stir and sauté for about 3 minutes.
Add a teaspoon each of coriander, caraway seeds, cumin, and ground ginger; stir to release flavors and sauté for about 5 minutes.
Add black beans with their liquid to the pan.
Pour in coconut milk for creaminess, add paprika, a splash of Tamari, thyme, oregano, a pinch of Adobo seasoning, and salt and black pepper to taste; stir everything together.
Cover the pan and simmer for 25 minutes.
After 25 minutes, add chopped spring onions and fresh coriander, and a dash more of Maggi; taste and adjust seasoning if necessary.
If needed, add more Adobo, salt, black pepper, onion and garlic granules, and a splash more of Tamari; simmer for an additional 5 minutes.
Plate the black bean stew and serve with rice, plantain, avocado, and kale, garnished with fresh coriander.
