2 lbs beef or pork (or a mix)
1/2 cup cassareep (cassava extract)
1 cinnamon stick
3 cloves
1 onion, chopped
2 garlic cloves, minced
1 tablespoon brown sugar
2 cups water

Cut the beef or pork into chunks. Season with salt and pepper.

Heat a large pot over medium heat. Add the chopped onion and minced garlic, cooking until fragrant.

Add the seasoned meat to the pot and brown it slightly to seal in the flavors.

Stir in the cassareep, cinnamon stick, cloves, and brown sugar. Pour in 2 cups of water to cover the meat.

Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2–3 hours, stirring occasionally, until the meat is tender and the flavors are deeply infused.
