1 lb lamb
1 large onion
3 cloves garlic
1 scotch bonnet pepper
2 tablespoons brown sugar
1 teaspoon cloves
1 teaspoon salt
1 tablespoon thyme
2 tablespoons oil
1 teaspoon all spice
2 cinnamon sticks
1/4 cup cassareep
4 cups water

Wash and chop lamb, including pieces with bone.

Heat oil in a pan and add lamb to cook until browned and water evaporates.

Remove lamb from the pan and sauté chopped onion and garlic with salt for about 3 minutes.
