1 lb stewing beef
1 lb oxtail
2 tablespoons brown sugar
4 garlic cloves
2 teaspoons Guyana thyme
1 teaspoon cloves
1 teaspoon cinnamon
1 tablespoon orange peel
1 large onion
2 tablespoons oil
1 teaspoon salt
1 teaspoon black pepper
4 cups water
1/4 cup cassareep

Heat oil in a pot.

Season oxtail with salt and black pepper.

Sear oxtail until golden brown on both sides.

Add beef in batches to avoid crowding the pan and sear until golden brown.

Add chopped onions and a little salt to the pot.

Cook onions until softened, then add in beef and oxtail.

Add brown sugar, cinnamon, cloves, Guyana thyme, garlic, and orange peel to the pot.
