Take a boneless center cut pork chop and place it in a bag.
Add granulated salt, black pepper, and garlic to the bag.
Flatten the pork chop as much as possible to tenderize it.
Chop some green onions for stuffing.
Take a slice of pepper jack cheese and set it aside; you can use any cheese you prefer or none at all.
Place the flattened pork chop on a surface and add some chopped green onion and pepper jack cheese on top.
Wrap the pork chop with a slice of American pork belly bacon, securing it tightly.
Repeat the process for additional pork chops, adding more green onion and cheese as desired.
Preheat the grill to about 350°F.
Place the bacon-wrapped pork rolls on the grill using indirect heat.
Grill for about 45 minutes, flipping halfway through.
After about 20 minutes, check the bacon; it should be constricted around the pork.
Brush your favorite barbecue sauce on the rolls and cover the grill for another 10 minutes.
Flip the rolls and add more barbecue sauce to the other side.
Cover the grill again and cook for an additional 10-15 minutes until done.
