1 whole, raw chicken
6 scallions
1 two-inch piece of ginger
some salt
3 quarts chicken stock
1 package of noodles (rice vermicelli or maifun)
cilantro
lime

Place the chicken in a large pot with scallions, ginger, and salt, and add enough water to cover it.

Bring to a boil, then reduce heat to a simmer for 5 minutes.

Remove pot from heat and let stand for 25 minutes.

Discard everything from the pot except the chicken and submerge it in an ice-water bath. Let stand for 20 minutes.

Shred the chicken meat with your fingers.

In a large saucepan, bring the chicken stock to a boil.

While the stock is heating, cook the noodles according to their package instructions (about 2 minutes).

Prep the garnishes by arranging the basil, bean sprouts, lime wedges, and sliced chiles on a platter.
