1 medium onion (approximately 1 cup, finely diced)
4 cloves garlic (finely diced)
1 green chili (finely diced)
2 red chilies (finely diced)
3 tbsp all-purpose flour
1/2 cup chicken stock
500 g cooked chicken (boiled and shredded)
1/4 tsp salt
1/4 tsp black pepper
a dash of nutmeg
400 g boiled potatoes
2 tbsp salted butter (room temperature)
2 egg yolks
1 tbsp lemon juice
1/2 cup mozzarella cheese (grated)
1/2 cup cheddar cheese (grated)
2 tbsp cilantro (chopped)
1 cup breadcrumbs
1 cup all-purpose flour (for coating)
egg whites (from the separated eggs)
