Start by choosing a very ripe mango, giving it a gentle squish to ensure it's soft but not overly squishy.
Cut the mango vertically, as closely to the seed as possible, and repeat on the other side.
Dice the mango into small cubes using a horizontal zigzag cutting technique.
Turn the mango inside out to create a 'mango hedgehog' for easy removal of the diced mango.
Keep half of the diced mango for garnish and place the other half into a blender.
Add a splash of almond milk or coconut milk to the blender with the mango for easier blending.
Blend the mango until it reaches a creamy puree consistency.
Prepare the overnight oats by adding a packet of matcha green apple overnight oats to a jar.
Add 1 teaspoon of chia seeds to the jar.
Pour in 1/3 cup of coconut milk and 1/3 cup of almond milk, ensuring the liquid is just above the line for the oats to soak properly.
Add a few dollops of coconut yogurt to the mixture for creaminess.
Scoop in the fresh mango puree and mix well to combine all ingredients.
