2 celery sticks, sliced into 2cm pieces
1 onion, chopped
2 or 3 big carrots halved lengthways then sliced into big chunks
1 leek, sliced into big chunks
A bunch of spring onions, tops and tail removed

1TBSP butter
2TBSP plain flour
2TBSP tomato purée
2TBSP Worcestershire sauce
2 beef stock cubes dissolved in 600ml of hot water
500g stewing steak
850g large potato
25g each mature cheddar and parmesan, grated

Heat oven to 140°C fan.

Soften the celery, onion, carrots, leek, spring onions, bay leaves and two thyme sprigs in a casserole with the 1TBSP of the oil and the butter for 10 mins.

Stir in the flour, followed by the purée, Worcestershire sauce and stock. Bring to a gentle boil.

Add the beef and bring back to a simmer.

Transfer the casserole to the oven, cover and cook for 2 hrs 30 mins, then uncover and cook for 30 to 60 mins until the meat is tender and sauce has thickened.

Meanwhile, cook potatoes in a pan of boiling water until they’re about ¾ of the way cooked.

Transfer meat to a baking dish.

Slice spuds into 1cm thick rounds and gently toss with seasoning, the remaining oil and thyme leaves.

Layer them on the beef, scattering with the cheese as you layer.

Increase oven to 180°C and bake for 30-40 mins until golden and crispy, and sauce bubbling.
