Shepherd's Pie

Shepherd's Pie is a traditional British dish that originated as a way to use leftover meat. It is typically made with ground lamb, reflecting its name, as shepherds tend to raise sheep. The dish has evolved over time and is now enjoyed in various forms, often with a topping of mashed potatoes. It is a comforting meal commonly served in homes and pubs across the UK, especially during colder months.

Preheat the oven to 450°F, then reduce to 400°F when ready.
In a large bowl, whisk together Guinness, buttermilk, melted butter, and vanilla extract.
In a separate bowl, sift together all-purpose flour, whole wheat flour, baking powder, baking soda, and kosher salt, then mix in oats and brown sugar.
Combine wet ingredients with dry ingredients until a batter forms and pour into a buttered loaf pan, topping with oats.
Bake for 45 minutes and cool on a rack for 10 minutes before removing from the pan.
For the shepherd's pie, peel and trim 10 cloves of garlic and place in a large stock pot with 4 large russet potatoes, covered with cold water.
Bring to a boil and cook for 10-15 minutes until tender.
Chop 4-5 carrots and 1 onion, and set aside.
In a pan, cook 3-4 slices of bacon until crispy, then remove and reserve some bacon fat.
Add chopped onion to the pan and cook until translucent.
Add 1 lb of ground lamb and cook until browned, then add carrots and 2 cloves of chopped garlic, cooking for about 7 minutes.
Sprinkle 1 tablespoon of flour and add 3-4 oz of tomato paste, mixing well.
Add a whole bottle of Guinness, scraping the bottom of the pan to deglaze.
Add a branch of rosemary, season with salt and pepper, and return the bacon to the pan with 1/4 cup of beef stock, simmering for 15 minutes until thickened.
Remove the rosemary and pour the filling into a sprayed pie pan.
Top with mashed potatoes, spreading evenly to create a crust.
Bake for about 35 minutes, then add more cheddar and fresh parsley on top and bake for an additional 10 minutes.
Let cool for 10 minutes before serving.
