Pour 1 gallon of fat-free milk into the Instant Pot.

Close the lid and press the yogurt button until it says boil.

Heat the milk to 180 degrees Fahrenheit, stirring occasionally to prevent sticking.

Once it reaches around 180 degrees, remove the pot and cool it down in a sink full of cold water until it's below 110 degrees.

Take some of the cooled milk and pour it into a bowl.

Add 1/4 cup of yogurt with live culture to the bowl and whisk until combined.

Pour the yogurt mixture back into the Instant Pot and stir to combine.

Close the lid and set the yogurt button for 12 hours to incubate.

After 12 hours, remove the yogurt and prepare to strain it.

Use a cheesecloth or flower cloth to strain the yogurt, aiming for equal parts whey and yogurt.

Tie the corners of the cloth into a knot and hang it over a container to catch the whey.

Let it strain for about an hour, stirring occasionally to help release more whey.

Once strained, transfer the yogurt into a mason jar for storage.
