Pour 1 gallon of whole milk into the Instant Pot.

Use the yogurt function and set it to boil to heat the milk to around 175 degrees Fahrenheit.

Cool the milk to 115 degrees Fahrenheit.

Add 1/2 cup of plain greek yogurt to the cooled milk and whisk it in.

Set the Instant Pot on the yogurt function for at least 8 hours, up to 16 hours.

After the yogurt has set, strain it using a cheesecloth or towel over a strainer for 4 to 6 hours.

Discard or save the whey that collects in the bottom of the pot.
