Pour 4.5 liters of whole milk into the Instant Pot.

Set the Instant Pot to sauté mode and heat the milk to 83°C, stirring to prevent burning.

Once the milk reaches 83°C, cool it down to 43°C.

Take some of the cooled milk into a bowl and mix in 4 tablespoons of probiotic yogurt.

Stir the yogurt mixture thoroughly into the milk in the Instant Pot.

Cover the Instant Pot with a lid that fits (not the Instant Pot lid) and set to yogurt mode for 9 hours.

After 9 hours, remove the yogurt from the Instant Pot and place it in a tub.

Refrigerate the yogurt for 4 hours to set.

To make Greek yogurt, line a bowl with cheesecloth and pour the yogurt into it to drain for about 4 hours.

After draining, transfer the thickened Greek yogurt to a storage container.
