Add 1 liter of 3% milk to a pot.

Heat the milk on medium high until it reaches 180°F (80°C), stirring to prevent skin from forming.

Add the yogurt mixture back into the pot of milk and stir thoroughly.

Cover the bowl with cling film and wrap in a warm towel.

Place in an oven with the light on for 6 to 12 hours to ferment.

After fermentation, place a strainer over a bowl and line it with cheesecloth.

Pour the yogurt into the strainer and cover with cheesecloth or cling film.
