Lay the ribs out with the meat side facing down.

Apply rub to the backside of the ribs and let set for about 10 minutes.

Flip over and apply rub to the meat side, letting it set for about 15 minutes.

Apply another coating of rub and let sit for another 30 minutes.

Prepare the smoker, using a drum smoker with apple and maple wood.

Cook the ribs in the smoker at a temperature between 250 and 275°F for a total of three hours.

After three hours, wrap the ribs in aluminum foil with honey, brown sugar, and barbecue sauce, meat side down.

Return the wrapped ribs to the smoker for one hour.

Check for doneness; bones should start to pop through the back and have shrunk about 1/4 to 1/2 inch.

Let the ribs vent open for 10 minutes before cutting.
