Mallorcas are a beloved Puerto Rican pastry, often enjoyed at breakfast or as a snack. Their sweet, buttery flavor and soft texture make them a comforting treat, often served with coffee. Traditionally, they are associated with family gatherings and celebrations, reflecting the island's rich culinary heritage. Today, variations can be found in bakeries across Puerto Rico and beyond, showcasing their popularity.

Combine 6 oz of water, 1 teaspoon of vanilla extract, and 1/4 teaspoon of liquid yellow food coloring in a bowl.
Mix the dry ingredients: 2 cups of flour, 2 and 1/4 teaspoons of instant yeast, 1/4 cup of sugar, and 1/2 teaspoon of salt in a separate bowl.
Pour the flour onto the counter and create a well in the center.
Add half of the liquid mixture into the well and stir with a fork to incorporate the flour gradually.
Continue adding the liquid mixture little by little until fully incorporated.
Use hands to mix the dough until it becomes soft and sticky.
Add the remaining water and continue mixing until all flour is incorporated.
Flatten the dough and add 3 and 1/2 tablespoons of shortening to the center, then fold the dough over to seal it in.
Knead the dough for 12 minutes, scraping the counter and hands as needed.
Sprinkle 1/2 teaspoon of flour on the counter, place the dough on it, and flatten it to help with stickiness.
Form the dough into a ball and let it rest for 30 minutes to rise.
Prepare a 9x13 baking sheet lined with parchment paper.
After 30 minutes, roll the dough into a cylinder and cut it into 6 equal pieces.
Shape each piece into a ball by bringing the corners into the center and rolling it in your hands.
Flatten each ball slightly and stretch it into a cylinder about 12 inches long, then shape it into a snail shape.
Pinch the tip of the snail shape underneath to secure it.
Place each shaped piece on the baking sheet, leaving 2 inches apart, and let rise for about 1 hour or until doubled in size.
