Today, it remains a beloved comfort food, often served with mashed potatoes and peas, and has inspired variations around the world, including vegetarian adaptations.

Prepare 400 grams of diced beef by cutting it into bite-sized chunks and trimming excess fat.
Prepare 200 grams of kidneys by cutting them smaller than the beef pieces.
Slice and dice 1 red onion finely and prepare a few cloves of garlic.
Heat a pan over medium heat and add oil, then add the onions and garlic, frying until they are soft.
Add the beef to the pan and brown it on all sides.
Season the beef with salt, black pepper, rosemary, and thyme.
Just before the beef is finished cooking, add the kidneys to the pan and cook them until done.
Sprinkle 2 tablespoons of plain flour over the meat mixture and fry for 1-2 minutes to soak up the juices.
Add Worcestershire sauce and 1 beef stock cube to the pan, stirring to combine.
Gradually add 300 milliliters of Guinness to the mixture, stirring until smooth.
Allow the mixture to reduce and thicken for about 10-15 minutes, stirring occasionally.
For the pastry, combine 250 grams of plain flour with 1 teaspoon of salt in a bowl.
Add 250 grams of soft butter in cubes and mix until some visible bits of butter remain.
Slowly add 150 milliliters of cold water until a soft dough forms, being careful not to overwork it.
Wrap the dough in cling film and refrigerate for half an hour.
Pour the filling into an oven-proof dish, ensuring it comes up to the top.
Roll out the pastry on a floured surface to about half a centimeter thick.
Use a cake tin or plate to trace a perfect circle for the pastry top.
Place the pastry over the filling, pressing down the sides.
Use fondant tools to style the edges of the pastry.
Make an egg wash by beating an egg with a little milk, then brush it over the pastry.
Add any leftover pastry decorations on top and brush them with egg wash as well.
Bake the pie in the oven at 180 degrees Celsius for about 35-40 minutes until golden and puffed up.
