Pick away the gristle, fat, and bone from the leg of lamb.

Cut the lamb into pieces about an inch or half an inch wide.

Heat olive oil in a pan and brown the lamb pieces.

Add 2 cups of diced onion and 2 cups of diced carrot to the pan.

Add 3-4 cloves of garlic, 1 cup of peas, and 1 cup of corn to the mixture.

Pour in 3 cups of lamb broth and stir.

Put the mashed potatoes in a large Ziploc bag for piping.

Cut a corner off the Ziploc bag to pipe the mashed potatoes onto the shepherd's pie.

Pipe the mashed potatoes to create an even layer on top of the stew.

Sprinkle Irish cheddar cheese on top of the mashed potatoes.

Bake in the oven for 45 minutes at 350 to 375 degrees.
