Paprike operite, očistite od semenki i isecite na krupnije komade.
U duboku šerpu stavite paprike, luk i česnjak. Zalijte hladnom vodom i dodajte sirće, so i šećer.
Stavite šerpu na šporet i kuvajte dok paprika ne omekša.
Ocedite paprike i sameljite ih ili sitno iseckajte.
Sameljene paprike stavite u šerpu i kuvajte na jakoj temperaturi dok voda ne ispari.
Zatim smanjite temperaturu i kuvajte ajvar oko 2 sata, povremeno ga mešajući.
Kada se ajvar zgusne, dodajte polako ulje i mešajte dok se ne sjedine paprika i ulje.
Po potrebi dodajte još soli.
Isključite šporet i ajvar sipajte u čiste i oprane tegle.
Tegle zatvorite poklopcima i stavite ih u prethodno zagrejanu rernu na 200°C.
