Today, they have gained popularity beyond the Balkans, with variations appearing in many European countries, showcasing the universal appeal of grilled meats.

Hummus provides a creamy texture with lower cost.
Place ground beef, ground pork, and ground lamb into a large mixing bowl.
Add 1 scrambled egg to the bowl.
Sprinkle in grated garlic, salt, baking soda, black pepper, cayenne pepper, and smoked paprika.
Using your hands, squish and toss the mixture until well combined and integrated.
Take about 50 grams (1.8 ounces) of the mixed meat and roll it into a ball.
Pressing only in the center, roll between your palms to form a cigar shape about 6.5 centimeters (2.5 inches) long.
Place the formed cevapcici on a platter and cover with cling wrap.
Refrigerate for at least one hour or overnight to allow flavors to develop.
When ready to cook, take the cevapcici out of the refrigerator and let them reach room temperature.
Heat a grill pan on medium heat and lightly grease with oil or bacon fat.
Place the cevapcici onto the pan and grill until a crispy brown layer forms on one side.
Make a quarter turn to brown the next side, continuing to rotate until evenly browned all around.
Total cooking time should be about 30 minutes, depending on thickness and heat.
For barbecue cooking, heat to medium and use aluminum foil or a grill plate to cook the cevapcici, rotating for even browning.
Serve the cevapcici with warm pita or tortilla chips, ajvar, and wedges of raw onion.
