1

Take 500 grams of 5% fat pork mince and mix until it starts to come together.

2

Add 2 tablespoons of Branston small chunk pickle to the pork and combine until thoroughly mixed.

3

Split the mixture into four parts and shape into burgers.

4

Pop the burgers into the fridge for about half an hour to firm up.

5

Preheat your grill with a cast iron plate on top until very hot.

6

Add a bit of oil to the plate and place a burger on it.

7

Cook the burger for about 4 minutes until a nice crust forms, moving it around to prevent sticking and adding more oil if necessary.

8

After 4 minutes, flip the burger and cook the other side for about 3 minutes.

9

After 3 minutes, add another heaped tablespoon of pickle on top of the burger.

10

Top the burger with a slice of strong cheddar cheese and cover to allow the cheese to melt for about 1 minute.

11

Remove the burger from the grill and assemble the burger starting with the bottom half of a crusty roll.

12

Add shredded lettuce and a big slice of tomato on the bottom half.

13

Place the burger on top of the vegetables.

14

Add sliced strong pickled onion on top and finish with the top half of the crusty roll.
