Buckwheat Pancakes

4 cups oat flour
2 cups buckwheat flour
5 tablespoons baking powder
6 tablespoons ground flax seeds
1/3 cup coconut sugar
1 tablespoon cinnamon

1 teaspoon vanilla
1 cup and 2 tablespoons pancake mix
1 cup and 1/4 cup beer
1 teaspoon apple cider vinegar

Make oat flour by blending rolled oats until fine.

In a large bowl, combine 4 cups of oat flour and 2 cups of buckwheat flour.

Add 5 tablespoons of baking powder to the flour mixture, using a sieve to remove lumps.

Incorporate 6 tablespoons of ground flax seeds into the mixture.

Add 1/3 cup of coconut sugar to the bowl.

Mix in 1 tablespoon of cinnamon and 1.5 teaspoons of salt.

Whisk all dry ingredients together until well combined.

Store the waffle mix in a large container for future use.
