Buckwheat Pancakes

1 cup buckwheat grouts
1 cup plant-based milk
1/2 teaspoon baking soda
12 to 15 drops stevia or 2 tablespoons maple syrup
1/2 teaspoon cinnamon (optional)

walnuts (optional)
cacao nibs (optional)
coconut shreds (optional)
maple syrup (for serving)

Wash and soak 1 cup of buckwheat grouts for 4 to 7 hours, then rinse until the water runs clear.

In a blender, add the soaked buckwheat grouts, 1 cup of plant-based milk, 1/2 teaspoon baking soda, and 1/2 teaspoon cinnamon (if using).

Add 12 to 15 drops of stevia or 2 tablespoons of maple syrup into the blender (or mix in later if forgotten).

Blend the mixture until smooth.

Divide the batter into three parts: leave one plain, add finely chopped apples to another, and mix walnuts, cacao nibs, and coconut shreds into the third.

Heat a pan and add a tiny bit of coconut oil, using a napkin to remove excess oil.

Pour the batter into the pan to form pancakes.

Flip the pancakes when they start bubbling and the edges are cooked, then cook for another minute or two until ready.

Serve the pancakes with your choice of toppings, such as apples, walnuts, cacao nibs, coconut shreds, and maple syrup.
