Buckwheat Pancakes

1 cup milk (or plant-based milk)
1 large egg
2 tbsp melted butter (or coconut oil)
1 tbsp sugar (optional)
1 tsp baking powder
1/2 tsp salt

In a mixing bowl, combine the buckwheat flour, baking powder, and salt.

In another bowl, whisk together the milk, egg, and melted butter until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.

Pour about 1/4 cup of batter onto the skillet for each pancake.

Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
