1 tbsp lemon zest
2 tbsp fresh lemon juice
1 tsp vanilla extract

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and poppy seeds.
