Egyptian Stuffed Grape Leaves - Dolma Mahshi

Dolma Mahshi, or stuffed grape leaves, is a beloved dish in Egypt, often served during family gatherings and special occasions. Traditionally, these rolls are filled with a mixture of rice, meat, and aromatic herbs, reflecting the rich agricultural heritage of the region. This dish has transcended borders, with variations found across the Mediterranean and Middle East, showcasing the diverse flavors and cooking techniques of each culture.

Prepare the rice stuffing by mixing rice, salt, pepper, dried mint, cumin, coriander, garlic paste, chicken powder bouillon, chopped onion and tomato mixture, parsley, and cilantro in a bowl.
While wrapping the grape leaves, ensure that the clear veins are facing up and place 1 tsp of filling on each leaf before rolling tightly.
In a pot, layer chopped tomatoes and onions with olive oil at the bottom.
Layer the stuffed grape leaves in circles, leaving tiny spaces for the soup to flow through.
Add more tomatoes on top, pieces of butter, lime juice, and jalapeno.
Slowly add soup from the side, ensuring to include 1 tbsp of tomato paste for color.
Cook and simmer for 30 minutes.
