Slow-Cooked Beef

2 lbs beef shin
2 tablespoons hot oil
2 carrots, sliced
1 cup whole shallots, chopped
1 cup celery, diced
1 tablespoon ginger, minced
3 cloves garlic, minced
2 tablespoons tomato puree
1 cup dry white wine
1/2 cup orange juice
1 cup chicken stock
1/4 cup parsley, chopped
1 tablespoon lemon or orange zest
1/4 cup mint, chopped
4 slices toasted bread
4 oz feta cheese

Fry the beef shin in hot oil, seasoning as you go.

Add chopped carrots, peeled whole shallots, sliced celery, peeled and chopped ginger, and garlic to the same pan.

Add tomato puree and cook for a few minutes.

Add the beef shin back into the pan with a glass of dry white wine and the juice of an orange.

Pour in chicken stock and season.

Simmer for an hour and 20 minutes.

Prepare gremolata by chopping parsley and garlic together, then mix in the zest of an orange or lemon.

Once the beef is cooked and tender, scatter the gremolata over it.

Stir through chopped mint.

Serve piled onto toasted bread and crumble feta cheese over the top.
