Show the ingredients: green bananas, seamos gel, coconut, condensed milk, brown sugar, oats, vanilla, nutmeg powder, bay leaves, and cinnamon sticks.
Add 6 cups of water to the pot.
Add 3 cinnamon sticks and 5 small bay leaves to the water.
Turn on the stove and allow the water to come to a boil.
Break the coconut and catch the water, being careful with the knife.
Cut the coconut into small pieces for easier blending.
Add 2 cups of water to the blender with the coconut and blend until smooth.
Strain the blended coconut mixture to extract the coconut milk.
Wash the green bananas and cut off the ends.
Dice the bananas into smaller pieces for blending.
Add the bananas to a stronger blender along with the oats and coconut milk, then blend until smooth.
Once the water is boiling and has changed color from the cinnamon sticks, add the blended banana mixture to the pot.
Whisk the mixture immediately to prevent lumps from forming, and continue whisking until it thickens.
Adjust the stove to medium heat to prevent burning.
Cook the porridge for 20 to 25 minutes, stirring occasionally.
After 20 minutes, add half a teaspoon of nutmeg powder and whisk to combine.
Add roughly 2 tablespoons of vanilla extract and 1/3 cup of brown sugar, adjusting sweetness to taste.
Add 2 tablespoons of seamos gel for creaminess, if desired.
Cook for an additional 5 minutes, then turn off the stove.
Serve the porridge in a bowl and enjoy.
